Beak-to-Tail Workshop at Small Farms Expo

Chef Chris Plemmons shows how to cut up a whole chicken

Chef Chris Plemmons demonstrated how to use the whole bird at the Beak-to-Tail Workshop at the Small Farms Expo at Olympic College. Workshop participants sampled spicy chicken feet and marinated rooster combs while learning how to cut up a whole chicken and how to make chicken stock. Chef Plemmons also answered questions about poultry nutrition and cooking. The workshop was sponsored by the Kitsap Poultry Growers Cooperative. The Small Farms Expo is a program of WSU Kitsap County Extension.
